Janelle’s Not Half Assed Scones


By request, a follow up to my last blog entry….

2 Cups Organic Unbleached Flour

Pinch of Sea Salt

4 tsp baking powder

¼ Cup Organic Sugar

1/3 Cup Organic milk

1 Organic Pasture Raised Egg

¾ tsp Organic Vanilla (Mexican Vanilla is best if you can get your hands on some)

4 oz (one stick) Organic Salted butter

(about ) ½  Cup White Chocolate  (I actually just eyeball it…)

(about) ½ Cup Organic Dried Apricots


1/3 cup Organic Sugar in the Raw

Can of Sweetened Condensed Milk (you guessed it…organic)

400* oven

15 min (all ovens differ….so keep your eyes on these babies)

MIX all dry ingredients together (not white choco or apricots yet)

In separate bowl whisk egg, vanilla, and milk together

Using pastry blender, mix butter into dry ingredients til butter is pretty much blended in

Add wet ingredients to the dry and blend together

As everything starts to get mixed up, add the white choco and apricots

On a floured surface knead dough, sprinkling in more flour if too sticky

Cut dough in half and make two balls

Flatten balls a bit (my favorite line of the recipe…)

Cut each into 4 pieces (No, wait…that is….)

Place on baking sheet

Sprinkle with Sugar in the Raw


Cool for about 5 minutes then drizzle with the sweetened condensed milk.

Make sure you do not eat these alone…if you do you might faint from the deliciousness of them and hit your head.  The bad side of having someone there just in case…you will have to share.

    • Yes, I have substituded the white choco and apricots with blueberries, mini chocolate chip & dried cranberries, boysenberries…get creative…the fresh fruit varieties tend to be juicy so you have to be careful about that. I think apricot & chocolate chips would be great!

(just so you know, sweetened condensed milk is also great on cake…learned this in India when i thought i was eating some special family recipe…my host just laughed and said “its just boxed cake…with scm on top!” Genius idea i must say…)
